Forks fun!


At the end of June Nate and I took our annual trip to Forks.  While the weather wasn't great, it was still so much fun.  First we stopped in Spokane to go to my cousin, Brenda's, sealing. It was a beautiful sealing and I'm so glad we got to be part of it!  Then after the festivities with our fam, it was off to Forks, WA! 


 Both Kids get car sick, so they were on motion sickness meds and slept most of the way there!

Over all we had a great trip, Nate had a great time showing Sadie where he grew up and we all enjoyed the ocean.  Now if only we didn't get rained out!


It's been a good summer!


Summer here in Idaho, while its been hot, it has been kind.  We've been enjoying each other and enjoying some family time out before school starts.  I'm mostly enjoying the lack of homework in my life.  That's soon to change, but I'm excited to be another step closer to the nursing program.  Sadie starts Kindergarten in a little over 2 weeks.  She has grown up way too fast.  John is enjoying destroying things and copying Sadie.  Here's some pictures of our fun Summer!

The year thus far....


Wow I am way behind!!!!  So let us start at Nate's birthday and Christmas, since it is June now, all I can really remember is that both were fun....Here's some pics!













Then was baby John's first birthday, on January 8,2012. The dog ate the cake I made him so we hurried and bought a cake, I was really proud of that cake too!  Here's some pics of his special day!

   Overall he had a great birthday and we are very appreciative of everyone you came and celebrated with us!!!  February came around and I got a new job.  St. Al's Nampa in the ICU.  That was the worst decision I have ever made for myself, but in times like these I should be thankful I have a job to help provide for the family.  That can be easier said than done, but I will trudge on until Nate gets promoted, or something better comes my way.  Would it be totally selfish to hope for both?  
  March was my birthday, it was good.  I can finally rent a car all by myself!!  Nothing much happened for the rest of the month, Sadie enjoyed school and I struggled to stay awake in my classes.  April again was not very active, just trying to finish up with school and keeping the kids entertained.  May Sadie and I both finished up with school and Sadie went to see an ENT specialist because of her giant tonsils.  She is scheduled for a tonsillectomy July 6th! 
  Also in May my brother in law came to Boise with his girlfriend who while in boise turned into his fiance!!!  Courtney and Sam are awesome and I can't wait for them to get married in August!

Margherita's Anyone?


Since Nate and I took our trip to Portland, I've been dying for a delicious margherita...pizza. So after searching for a bit on google, I found what I was looking for. I made my own sauce and it was to DIE for! The recipe for the sauce is;
1 can (8oz) Of crushed tomatoes*
(I used whole peeled stewed tomatoes and crushed them myself.)
One clove of garlic (not the whole bulb) crushed
2 Table spoons of olive oil
1/4 teaspoon of red pepper*
(I used cayenne and it was a bit too spicy, so just a pinch of cayenne next time.)
1/4 teaspoon sugar
1/4 teaspoon salt

Combine all this in a sauce pan and bring it to a simmer. Let it simmer for 10-15 or until sauce thickens. At desired consistency take off heat and slather it on the pizza crust. This makes enough sauce for a 14 in pizza. After that stick slices of fresh mozzarella on it and slices of meat (any sort of pork is best), I used canadian bacon because I couldn't find pork shoulder. Next place fresh basil on top (I couldn't find basil so I used spinach, it worked just as well).Here is the before

As Nate pointed out as we placed everything on top, put the majority of your toppings away from the middle. As the pizza cooks everything will melt into the middle, so you don't need a lot in the middle. This pizza was amazing, and the sauce really made it!

In other news, the kids are great. My little man is 0ne, I can't believe how fast this year went by! He is always smiling and really brings me a lot of joy. Sadie loves him and him her. Sadie is doing great in pre-school and is so excited to start pre-school this fall. We now have a great Dane named Bruce. He is awesome, except when he breaks into the chicken coop to see what they are eating. He leaves the chickens alone, but he wants to eat the goodies I give them. The kids love him and so do Nate and I, so we'll keep him! Well, that's all for now...should probably post Christmas stuff on here...meh. I'll do it next year ;-) Happy blogging!
